  • 2 tbsp rum (optional)
  • 1/2 cup (60g) powdered sugar
  • 3 1/2 cups (445g) all-purpose flour (see notes for GF option)
  • 2 tsp baking soda
  • 1 tbsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/8 tsp clove
  • 1 cup (215ml) oil
  • 2 cups (360g) light brown sugar
  • 1 (15oz) can pumpkin puree
  • 1/2 cup homemade butterscotch sauce, cooled
  • 4 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 cup (230ml) buttermilk, room temperature

Instructions

  1. In a saucepan, melt the butter over medium heat. Mix in the brown sugar and heavy cream, bringing it to a simmer for 6 minutes.
